The Tambourine Room by Tristan Brandt is an 18-seat fine dining experience within the Carillon Miami Wellness Resort. At the Tambourine Room, we are delighted to offer our guests a delicate take on modern classic French cuisine with Asian influences.
When the space first opened in 1958 it was known as a place for cocktails and conversation and now, nearly 65 years later, Chef Brandt and his team have reenergized the room, transforming it into a world-class dining destination.

Indulge in Our Tasting Menu
Throughout the evening, guests will delight in a six-course tasting menu filled with surprises and storytelling. The menu draws inspiration from classic French haute cuisine and Chef Brandt’s culinary upbringing cooking in Michelin-starred kitchens in Asia.
Beginning with amuse-bouches followed by an elegant combination of seafood and meat dishes, there is something to tantalize all palates along this culinary journey.
Our local and seasonal ingredients are carefully selected from farms around South Florida to ensure quality and divine taste in every bite.
