A New Chapter in Michelin Dining: Fall 7-Course Menu Now Available

The Tambourine Room by Tristan Brandt, nestled within Carillon Miami Wellness Resort, offers an intimate 12-seat fine dining journey that reimagines modern classic French cuisine with refined Asian influences. Originally opened in 1958 as a space for cocktails and conversation, this iconic venue has been transformed nearly 65 years later by Chef Brandt and his talented team into a world-class culinary destination.

This season, the menu by Chef Tristan Brandt and Chef de Cuisine Timo Steubing showcases an exquisite balance of French tradition and contemporary innovation. Thoughtfully crafted, each dish highlights the finest ingredients, ensuring every bite is an experience. From the pristine Royal Miyagi Oyster paired with liquid ice cream pearls and wasabi to the Mediterranean-inspired Raw Hawaiian Shrimp, each course reflects the chefs’ mastery of flavor and technique.

Throughout the evening, guests will indulge in a tasting menu that celebrates the rich flavors of the season, blending modern French cuisine with global influences. Inspired by Chef Brandt’s experience in Michelin-starred kitchens across Europe and Asia, each course is a harmonious balance of tradition and contemporary flair. Beginning with an artfully crafted starter, the menu unfolds with dishes that embrace the essence of fall, featuring earthy flavors and elegant presentations. Chef Brandt and Chef Steubing recommend pairing each course with a curated wine selection to enhance the subtle nuances of the ingredients and create a deeper sensory experience.

This menu is a testament to the Tambourine Room’s philosophy: the better the product, the less it requires. Here, each dish is a delicate balance of art and flavor, rooted in classical French techniques but open to the world’s finest ingredients and inspirations.

Things To Know For Your Culinary Journey

Experience our new fall 7-course tasting menu, presented Wednesday – Sunday at 7pm daily.

  • A seven-course tasting menu for $285 per guest with the option to add Chef’s recommended wine pairing for $135.
  • To ensure a seamless dining experience, we kindly ask that you arrive no later than 6:45pm for the 7pm seating. Feel free to savor a refreshing cocktail at our bar as you await your culinary journey.
  • Dietary restrictions: We are not able to accommodate gluten-free, nut, vegetarian, vegan, kosher, or dairy-free requests. If you have additional dietary restrictions, we do not recommend this tasting menu.
  • Beverages: At this time, the restaurant only offers a Chef’s recommended wine pairing for each seating as well as an expansive wine list. If you prefer to bring a bottle from your personal collection, a corkage fee of $75 will apply.
  • Reservations for the first of each month for that month and the following month.
  • This culinary experience is intended for adults only.
